Military Knife Fighting by Robert K. Spear (1991, Paperback). The book is about 300 pages long, and the man eater story only covers about the first 100 pages, but the rest of the book, follows the construction of the railroad, and different hunts, and close calls of Patterson, which are often risky and hair raising.
